Our durum wheat semolina
The different varieties of semolina we use in the pasta-making process are all harvested from organically grown crops all over Italy, and include: svevo, san carlo, simeto, saragolla, capelli, etc. We have taken account of and respect the variability of harvests from one year to the next, resulting in “variable” blends, but we also ensure that qualitative and nutritional standards are maintained.
Our production process
To ennoble the quality of our “raw materials” Il Pastificio dei Profeti relies on preparation methods that are based on the ancient pasta-making tradition: the pasta mix is soft but elastic, it is bronze-drawn and then dried slowly at a low temperature.
